Vegetarian Chickpea Burgers



INGREDIENTS AND DIRECTION
1 cup cooked chickpeas
1 tablespoon vegetable oil
1 finely chopped onion
1 chopped garlic clove
½ teaspoon chili powder
1 teaspoon ground cumin
1 teaspoon ground coriander
2 teaspoons parsley
1 beaten egg

Heat oil in frying pan and cook onions and garlic until soft. Add chili powder, cumin and coriander then cook a few minutes more. Mash chickpeas with potato masher and stir parsley, onion mixture, mashed chickpeas and beaten egg. Form chickpea egg mixture into six individual patties. Preheat oven to 200 degrees F and spray a cookie sheet with non stick spray. Brush each patty with a little vegetable oil and place on tray. Bake veggie burgers for 20 minutes or until cooked through.
